Chewy Chocolate Cookies! (recipe)

Another busy day of packing. Had a simple dinner of panko mozarella balls and tomato sauce from scratch (fresh tomato + garlic + salt + pepper + paprika + dried basil + olive oil).
This recipe is especially for Jennifer, though I really randomly just put stuff together:
Panko Mozarella Balls (Click here for the recipe) and Tomato Sauce
Ingredients for the Tomato Sauce
- 2 large fresh tomatoes, chopped
- 12 cloves of garlic, finely chopped
- Paprika
- Dried Basil Flakes
- Olive Oil
- Salt
- Pepper
Procedure
- Sautee garlic for 2-3 minutes in a saucepan on medium heat (avoid burning them!).
- Add the tomatoes, paprika, basil, salt, pepper, mix, then let boil until the tomatoes become soft.
- Turn off the heat and leave the saucepan for 5 minutes.
- Pour everything into a blender and pulse until it becomes a smooth paste.
Note: I would add a chicken cube into this to add more flavor next time. The recipe above is more on the sour-garlicky side, which is quite good but not yet there.
Peach Lemonade Coolers
Ingredients:
- 2 medium sized, ripe peaches, peeled, halved and pitted
- 1/2 cup lemonade
- 1 ounce vodka of choice
Directions:
- Puree the peaches and lemonade in a blender until smooth.
- Pour vodka over ice in a rocks glass.
- Top off with peach-lemonade puree.
