April 27, 2012 - Yummy dinner, a goat’s cheese and rosemary macaroni and cheese.  Really easy to make.  Boil up some rigatoni and cook up some chicken (we used pork).  Then mix together goat cheese, whipping cream, chopped garlic and fresh rosemary.  Salt and pepper to taste and mix together.  Yummm!

Another busy day of packing. Had a simple dinner of panko mozarella balls and tomato sauce from scratch (fresh tomato + garlic + salt + pepper + paprika + dried basil + olive oil). 

This recipe is especially for Jennifer, though I really randomly just put stuff together:

Panko Mozarella Balls (Click here for the recipe) and Tomato Sauce

Ingredients for the Tomato Sauce

  • 2 large fresh tomatoes, chopped
  • 12 cloves of garlic, finely chopped
  • Paprika
  • Dried Basil Flakes
  • Olive Oil
  • Salt
  • Pepper

Procedure

  1. Sautee garlic for 2-3 minutes in a saucepan on medium heat (avoid burning them!).
  2. Add the tomatoes, paprika, basil, salt, pepper, mix, then let boil until the tomatoes become soft.
  3. Turn off the heat and leave the saucepan for 5 minutes.
  4. Pour everything into a blender and pulse until it becomes a smooth paste.

Note: I would add a chicken cube into this to add more flavor next time. The recipe above is more on the sour-garlicky side, which is quite good but not yet there.

Peach Lemonade Coolers
Ingredients:
2 medium sized, ripe peaches, peeled, halved and pitted
1/2 cup lemonade
1 ounce vodka of choice
Directions:
Puree the peaches and lemonade in a blender until smooth. 
Pour vodka over ice in a rocks glass.  
Top off with peach-lemonade puree.
